Ingredients For Citrus And Herb Roasted Chicken
1 full roasting chicken (5 to 6 lbs.), The Neck and giblets discarded
1 orange, quartered
Lemon, 1 quartered
1 head of garlic (halved) plus 3 garlic cloves (chopped)
2 (14 oz.) cans of reduced-sodium chicken broth
¼ cup frozen orange juice concentrate, thawed
¼ cup fresh lemon juice
2 tbsp. olive oil
Salt and freshly ground black pepper
1 tbsp. chopped fresh oregano leaves
Kitchen string (or butcher twine)
How to Prepare Roasted Chicken at Home
To prepare your roasted chicken using the above recipe, do the following;
- Preheat the oven to 400º F and ensure the rack is in the centre of the oven. Cut the chicken dry and sprinkle with salt and pepper. Then, stuff the chicken with the orange, lemon, and garlic halves.
